Soups On!

With apologies to those of you in the southern hemisphere, I’m here to share a soup recipe. It is soup season, after all. When we had the Gingerbread Competition, I made this Kale and Kielbasa soup and MyDadLovesMeBestSister has asked me twice now for the recipe. I promised I’d put it here on the blog for her. And for me too — I love having recipes on the internet ’cause I can call them up on the iPad while I’m in the kitchen.

I didn’t realize that I loved kale until I made this soup. Sorry — the picture isn’t the greatest, but it’s the only one I managed to take on gingerbread night.

Kale Soup

Kale and Sausage Soup

1/4 cup olive oil
2 yellow onions, finely chopped
4 cloves garlic, minced
3 large russet potatoes, about 2 1/2 lb total weight, peeled and thinly sliced
6 cups chicken or vegetable stock
3/4 lb kielbasa or other cooked sausage, cut into slices 1/2 inch thick
1 bunch kale, thick stems and ribs removed, thinly sliced
Salt and freshly ground pepper
Extra-virgin olive oil for drizzling

In a large soup pot medium over heat, heat the olive oil. Add the onions and saute until lightly browned, 5 – 7 minutes. Add the garlic and cook for one minute longer. Add the potatoes, toss to coat, and saute for 2 minutes longer. Add the stock, cover, and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are tender, about 20 minutes.

Add the sausage, cover and simmer until the sausage is heated through, about 5 minutes. Add the kale and cook, uncovered, until it is wilted but still bright green, 3 – 5 minutes. Season to taste with salt and pepper. Ladle into soup bowls and drizzle with extra-virgin olive oil. Serve and enjoy!

  1. Mmmmm yummy…..a favourite of ours, more or less. In order to avoid salt I use salt free sausage we have a butcher make, slice the raw sausage or simply break it open, brown it, then pick up from your onion step…..I also make it with swiss chard, or any greens really…..tonight the wind is howling and the temperature dropping in our weird weather, as it rained all the day the roads are also freezing of course, the drive to work will be lovely!

  2. That is one of my most favorite soup’s. I use the Jamie Oliver recipe, yum. I need some of that soup, it’s like -30C here today. Gawwwwd! I was outside for five minutes and thought my nose would drop off.

    i havent seen Downtown Abbey yet…but im guessing I could catch season 1 online somewhere and pick up on season two soon enough…those were some great Maggie Smith clips!

  4. I just spent the evening stitching & watching the first two episodes of season 2. . . (again) (mostly watching & not as much stitching as I usually get done when the tv is on. . .) Love Downton Abbey! . . . & I love the Top 10 Maggie Moments. . . too funny! Thanks for the link!

  5. Yum! That sounds sooo good right now. We’re having a cold snap here in California and a storm is moving in over the next couple of days, so soup sounds awesome, especially homemade.

  6. This sounds so good, and like Lisa said it’s pretty cold here in Cali, so I think this soup will be on our menu very soon!!! Haven’t seen Dowtown Abbey.

  7. I have been rocking the soup thing here too the lat few weeks. I blushed a little but one of the mothers at school asked me for the recipe as her son came home raving about it. Sadly I am a soup winger and so didn’t have a recipe as such. She didn’t look so impressed with a list of what ingredients I could remember.

  9. This soup looks hearty and so good. We are in for a round of storms the rest os this week and this might just fit the bill for supper around here.

    I LOVE Downton Abbey. What would be do without Masterpiece classics?

  10. I don’t know. I’m on the fence with the soup recipe. Looks delish but then again… Never heard of Downtown Abbey. What am I missing?

  11. Recently, when I was making one of my ‘using up what’s in the fridge’ soups, I threw in a bit of leftover salami. As always I blitzed the soup (I don’t like ‘bits’ in my soup!) and it was delicious with tiny tastes of salami through it.

  12. I LOVED 1st season of Downton Abby. I’ve watched the first 2 episodes of season 2 and I am disappointed. The writing and story lines aren’t nearly as good. This drama between Anna and Mr. Bates is utterly soap opera-ish. :(

    Dowager Grantham is still herself and outstanding. Mary and Matthew are still compelling.

    I’m hoping they pull it together soon.

  14. First off I went and added sausages and kale to my shopping list. Then I clicked on the Downton Abbey link…..That was two hours ago! I’ve been watching all those clips! My sister, my sister-in-law, my office mate and I are all addicts. What a great show….I’ve been a Maggie Smith fan since I first saw her in The Prime of Miss Jean Brodie about a century ago!

  15. Love my Ipad in the kitchen too! That’s where I use it the most. I made a similar soup last week – but wasn’t impressed. This one sounds better tho!

  16. Thank you SO much for that link. I’ve just had a good laugh with Maggie Smith. She is a treasure. I’d forgotten most of those moments from the show, so it was lovely to see them again. Must get myself the DVD. Looking forward to series 2 (whenever the station here who has the rights finally decides to air them!).

  17. Okay, I guess I’m going to have to start watching Downtown Abbey. I adore Maggie Smith, so it will be a small sacrifice. How funny that you posted about kale soup! I made some when Nathan was home with chorizo sausage and it was so good, I made it again the other day. Great minds, great minds……

  19. Mmmmmmm….
    I may try making this soup! My favorite grocery store has homemade hot soups available at lunchtime, and one of my favorites is called “Portuguese Kale Soup”. It has chorizo (sp?) sausage and is delicious. I keep saying I am going to try making it. And now my Mum says that there is a type of Portuguese bread/rolls that goes great with it. I found a recipe on King Arthur Flour (maybe it was the book?) website. Anyway, I guess there will be plenty of soup weather ahead for me to give it a try.

    We’ve been making something similar to this, only with crumbled sausage and some cream added. Yum. I love kale in soup. I might have to try this version, though, with the kielbasa for something different.

  21. YUM!! I’m so going to make this soup. probably this weekend. i LOVE kale it soup. i think i learned that last year. i’m going to try to grow some in my garden this year, hopefully!
